Low carb Mediterranean chicken salad with buttermilk dressing. This a favorite dish for those who are avocado recipe fans!
Simple, fast and low carb Mediterranean recipe for lunch or dinner.
INGREDIENTS
- 2 cups Baby Spinach
- 1 tbsp Mint Leaves, optional chopped
- 1/4 cup Strawberries sliced
- 1 Avocado chopped
- 1/4 cup Almonds
- 1/2 ` cup Grilled Chicken (brush the chicken with olive oil; sprinkle with Italian herbs to taste and grill for 4 minutes per side)
- 1/2 tbsp Crumbled Feta Cheese
Dressing
- 2 tbsp Buttermilk*
- 2 tbsp Olive Oil extra virgin
- 1 1/2 tbsp Lemon Juice
- 1/2 tsp Chia Seeds
- 1/2 tsp Wholegrain Mustard
- 3-4 Drops Stevia optional
- Pinch of Salt to taste
INSTRUCTIONS
- Make the salad; in a large bowl, combine baby spinach, mint leaves (if using), strawberries, avocado, almonds, and grilled chicken.
- Make the dressing; combine buttermilk, extra-virgin olive oil, and lemon juice in a bowl. Whisk until blended.
- Stir in Chia seeds, and whole-grain mustard.
- Add Stevia if using (adds a nice sweet balance) and salt to taste.
- Serve salad and drizzle with dressing.
Note
- Instead of buttermilk you can use the full-fat coconut milk. It does change the taste but gives a nice balanced sweetness and exotic taste.The dressing is optional but gives a nice touch. Still, you can use some other type of dressing. We suggest simple olive oil and lemon juice mix, with Chia or poppy seeds. They give a nice crunchiness.
